How We Celebrated Thanksgiving in 2014

Here’s a video of us mountain climbing yesterday on Thanksgiving Day. We just finished the most difficult part of the climb.

To our surprise my daughter Rainbow (who’s less than 3 and a half years old) did virtually all of the upward part of the hike herself. This was a first for her. In fact, she was never in the sling while we were going up. And the only reason we put her in the sling to go down was to save time as it was getting dark and there was no trail for us to follow.

Also Andrew did very well with the hiking. He was often leading the way. We also had fun in some small caves. Also Andrew and Rainbow climbed through a little tunnel while Karmyn and I climbed around the side of it and met them on the other side.

We had no idea if we’d find an easy way to get back to the truck or if we’d get blocked by a cliff or highly difficult terrain.

Later for dinner Karmyn made a delicious Thai inspired raw food dinner. Though not spicy for the kids.

We used frozen (raw) coconut meat from Thailand that we were actually able to buy at Safeway. That surprised us as we usually only find this young coconut meat in health food stores and even our local health food stores do not carry it.

In case you’re interested the brand is “Exotic Superfoods” Young Thai Coconut Meat. It was rather pricey at $15 for a pound. But when we added up our expenses it was about as expensive as taking the whole family out for dinner at a “cooked” Thai food restaurant.

Karmyn came up with a delicious new version of a RAW Pad Thai recipe made with young coconut meat.

And probably a lot cheaper than going out to a raw food restaurant of which there are none in our area anyway.

And I figured we’d also get in on the Thanksgiving fun by putting our all time best seller Savory Veggie Stews at the lowest price it’s been all year.

Plus you’ll get a NEW special bonus Thai recipe that Karmyn made for us last night on Thanksgiving. The recipe for what was in the picture above.

Andrew just absolutely loved it. And he’s a super finicky eater. And Rainbow chowed down on this too. I also loved it.

I’ll be emailing that bonus recipe to all Savory Veggie Stews customers sometime after this coming Sunday at 11:59pm Eastern Time. That’s also when this incredible Savory Veggie Stews sale ends.
